All right guys let’s get cooking with another delicious recipe. Everyone’s Favorite: Mantu (Beef dumplings). It is the most popular dish in Afghanistan. Lets get cooking!

Filling
Here is what you will need for filling:
- Grounded meat
- Onions
And for the spices you will need:
- coriander powder
- black pepper
- salt
To make the dumplings you need
- Wonton wraps (sold in Asian Stores or online)
- Flour
- Water
First of all, the meat needs to get cooked. Heat a pan and add the beef and cook it without adding anything else in it.
Mince your onions by hand or in an electric food chopper:
Grab a bowl and add:
- cooked beef
- minced onions
- coriander powder
- black pepper
- salt
and Mix well
Once your beef mixture is ready, you can start filling. What you will need to do so are:
- 1 cup Flour
- 1 cup water
- wraps (sold in Asian Stores) or home made
Alright, Let’s the filling begin!
Take a piece of wrap. Use water to moisture the edges. Place about 1 tbsp. of beef mixture in the middle of wrap. Join two opposite ends with each other. Press edges well and seal the remaining four ends with each other (as shown in the video). Dip in the flour. And place it on a flat surface or flat dish.
Repeat the same for all.
It is always better to have an extra pair of hands to finish the filling. It’s also a chance for the family to sit together, chat and have fun.
Steaming
Once all your dumplings are done…it is time to steam them in a steamer pot. You can buy it in any Asian store or online.
To steam what you will need is
- Oil for dipping
- Steamer pot
- Your dumplings
Dip the dumplings in oil before putting them on the rack to prevent sticking. You can either dip each dumpling in oil and then place it on the steamer racks or use a brush to grease the bottom of steamer racks and then place the dumplings. Add water in the steamer dish and boil. Place the racks filled with dumplings back on the steamer dish. Cover lid. Steam for 30 minutes.
Carrot Sauce
Here is you need for the carrot sauce:
- Vegetable oil
- onions, diced
- tomato sauce
- carrots, chopped
- Split chickpeas
- water
For spices you need:
- salt
- Coriander powder
- black pepper
Heat oil in a Cooking Pot- high heat. Add diced onion to it. Fry it until golden brown.
Add tomato sauce
Fry until there is no water left .Add carrots and Split chickpeas
Add all the spices: salt+ coriander powder+ black pepper. Add water and cook for at least 20 to 30 minutes.
Garlic Yogurt sauce To make the sauce … it is preferred to use the Afghani yogurt called qoroot…But if you cannot get your hands on it…you can use any yogurt and add minced garlic in it…the water is used only if you are using the Afghani yogurt to dissolve it.
Serving Now that you have got everything ready…you just need to put them all together…
Grab a flat dish and serve them in layers as following:
- A layer of Garlic yogurt sauce
- Steamed Dumplings
- Another layer of Garlic yogurt sauce
- Dry mint
- Carrot sauce
- Fresh coriander
And there you have it…serve it with a piece of bread (optional)
