Aush Afghani Noodle Soup – Afghan Food Recipes طرز تهیه آش کوفته دار افغانی

Aush is the Afghani noodles soup and the secret to this delicious recipe is that it is served with Afghani yogurt mixed with garlics. Meatballs are cooked separately. If you would like to serve it vegetarian, all you need to cook is the noodles and mix it with afghani yogurt.

Here is all that you will need to cook this delicious recipe:

 Meatballs-Kofta

Ingredients

  • 4 Onions
  • 3 Garlic Cloves
  • 1 Green Pepper
  • 1 Cup Parsley
  • 1/2 kg meat
  • 1 tbsp. salt
  • 1 tbsp. black pepper
  • 1 tbsp., coriander powder
  • 1 egg
  • ½ cup, cooking oil
  • 5 onions
  • 1 cup, tomato sauce
  • 3 cups, water

Noodles Soup-Aush

  • ½ cup, cooking oil
  • 3 garlic cloves
  • 1 tbsp., turmeric powder
  • 5 tbsp.Tomato sauce
  • 1 cup canned or boiled chickpeas
  • 1 cup canned or boiled kidney beans
  • 1 tbsp. salt
  • 1 tbsp. black pepper
  • 2 cup noodles

Yogurt with Garlic

  • 1 cup water
  • 4 tbsp. Yogurt
  • 3 garlic cloves, minced

Meatballs-Kofta

Use a food chopper, mince onion, garlic, green pepper and parsley. In a bowl, add meat, minced onion and garlic, minced green pepper and parsley, salt, black pepper, coriander powder and one egg. Mix well and make small meat balls. Place them all on a flat dish.

Mince onions in a food chopper or by hand. In a pot, add oil and minced onions. Cook on medium heat, until onions are golden yellow. Add tomato sauce and fry it until all water is absorbed. Add water and boil it over. Add meat balls and cook it on medium heat for 15 minutes or until meatballs are done.

Noodles Soup-Aush

In a pot, add cooking oil and minced garlic cloves. Fry garlic on medium heat until it is golden brown and add turmeric powder. Continue by adding tomato sauce and fry it until all water is absorbed. Add water, boiled or canned chickpeas, boiled or canned kidney beans and boil it over for few minutes. Add salt, black pepper and noodles and boil it over for 10 to 15 minutes until noodles are cooked.

Yogurt with Garlic

In a small bowl, add Afghani yogurt and water. Mix it well with water. Add minced garlic and mix again.

Afghani Noodles with meatballs and yogurt

In a bowl, Serve hot noodles mixed with yogurt and meatballs. Garnish with mint powder.
