
Bolani Afghani is a flat- bread fried with a vegetable filling. It has a thin crust and traditionally stuffed with chives or potatoes. For our recipe we will use leeks for the filling since we do not have chives where we live in Canada. Bolani Afghani is usually made for special occasions where friends and family participate in the preparation. Usually everyone sits around a table for the filling. It is known to be best served hot with plain yogurt or mint yogurt. White dough is common, although some prefer wheat or rye. There are four parts involved to make our delicious recipe. Part 1: dough Preparation, potato Filling and Leek Filling Preparation, filling and frying. Follow along each part for ingredients and equipment needed. What you need to make Bolani Afghani

Ingredients needed
Dough

½ cup, warm water or as needed
2 cups, All-purpose Flour
½ tbs, Yeast
½ tsp, Sugar
Potato filling


4 medium potatoes
1 chopped and fried onion
4 chopped and fried garlic cloves
1 cup chopped coriander
1 cup chopped green onions
1 tbs Coriander Powder
1tbs salt
1tbs black pepper
Leek Filling


1 cup chopped leek
1 tbs salt
Yogurt Dip

1 tsp mint

- Dough
2 cups, all-purpose Flour
½ cup, warm water or as needed
½ tbs, Yeast

- Potato filling

Directions
- Dough
- In a small bowl, add yeast and sugar in warm water
- In a big bowl, add
- the flour
- yeast mix (yeast + sugar in warm water)
- salt
- Mix and knead dough
- Cover it and leave it aside for 45 mins to an hour
- Divide the dough into equal pieces
- Shape each piece into ball-shaped dough
- Potato Filling
- In a bowl, mash boiled potatoes and add the following:
- Add fried onions
- Add fried garlic
- Add chopped coriander
- Add chopped green onions
- Add coriander powder
- Add salt
- Add black pepper
- Mix well
- Leek Filling
- In a bowl, add salt in chopped leek
- Filling and Frying
- Take a piece of dough and roll it into a ball shape
- After spreading some flour onto a surface, use a rolling pin to make the dough as thin as you can
- Fill it half with potato or leek filling and seal it over with the other half
- Continue flattening it as much as you can with your hands or a rolling pin.
- Fry it on a pan with a large surface.
