
Afghans love their bread and their Quroot; put them together and you get everyone’s favorite recipe: Qurooti. Back home Qurooti is known to be poor man’s dish because bread is not expensive. Traditionally, all you would add on the bread is Quroot and onions. We make it a bit different here at home with few more added ingredients. The main Ingredient in Qurooti is Quroot; Quroot is made from sour yogurt. It is shaped into tiny, salted balls and left out to dry. When used in recipes, the salted balls are turned into a paste. The process takes time as Quroot is first soaked in warm water followed by turning it into a paste by rubbing it in a clay bowl. Luckily for us, we can buy prepared Quroot paste in any Afghani grocery store… Just look for “Whey”or “Kashk” in any of your local grocery stores.

Ingredients
1 cup oil
2 potatoes chopped
3 tomatoes chopped
2 Onions chopped
1 tbsp. salt + 7 garlic cloves
2 cups water
Garnish with dry mint

5tbsp. Quroot
Directions
- In a Fry Pan, Fry potatoes, tomatoes and onions; separately. Keep them aside in separate plates.
- Add salt and garlic in a Garlic masher and crush garlic into a paste.
- In a small bowl, Add the garlic paste in Quroot and add some water to mix well until it is smooth.
- Pour this in a Saucepan and cook it on medium heat.
- Add water and bring it close to boil. Do not boil it over.
- In a bowl, tear the bread into large bite-sized pieces.
- Now, pour hot Quroot that is ready on the stove on it (as much as you prefer)
- Add fried potatoes, tomatoes and onions in layers on it.
- Garnish it with dry mint and add walnuts for make it more delicious.
