A pinkish tea topped with clotted cream is made on special Afghan occasions. It is a long process to make it but totally worth it. First, Clotted cream is collected from milk. Then, baking soda is added to green tea to make a dark red dye. Finally, the dye is added to boiled milk to achieve a pinkish coloured tea. The tea is then topped with clotted cream.
Here is all you need for this yummy tea:
Qaimaq/ Clotted cream for tea
- 4 cups milk (3.25 %)
- 1 cup whipping cream
Coloring dye
- 3 cups of water
- 2 tbsp. green tea
- Baking soda (for coloring)
- Few cardamoms
- 1 cup water
Pink Tea
- 3 cups milk
- 1 tsp cardamom
- 3 tbsp. Sugar
….and here is how you do it:
Qaimaq/ Clotted cream for tea
Boil 4 cups milk (3.25 %) on high. Add 1 cup whipping cream & Let it simmer on low for 2 hours. Collect the clotted cream on top of the milk in a small dish. Let it cool down.
Coloring
In a pot, add 3 cups of water. Add green tea and Baking soda for coloring. Add a few cardamoms. Add one cup water and boil it. Drain it in a dish.
Pink Tea
In a new pot, add milk. Add cardamom and Sugar.
Add coloring dye as needed to get a pinkish color. Pour tea in a pot. Serve tea in a cup with Qaimagh/cream on top. Serve hot with cookies or bread.
