Salty Cookies-Kolche Shor/namkin طرز تهیه کلچه شور افغانی
Salty Cookies is usually served with sweetened tea at afghan gathering. At special occasions, it is served with a special tea called qaymaq chai or pink tea. It takes quite a preparation to make the tea but it is totally worth the effort. To make the salty cookies a mixer can be used to facilitate the process. All purpose flour is used and it is garnished with sesame seeds. Here are all the ingredients you need for this delicious and salty cookies:
¾ Cup, milk, 1 Cup, oil
4 Eggs, 4 Cups all purpose flour
1 tsp. Salt, 1 Cup Yogurt
½ tbsp. Baking powder, ½ tbsp. Yeast
Black sesame seeds, 1 tbsp. Cardamom

1 Cup Yogurt
4 Eggs
4 Cups all purpose flour
½ tbsp. Yeast
½ tbsp. Baking powder
1 tsp. Salt
1 tbsp. Cardamom

In an electric mixer, add milk, oil, yogurt, eggs, yeast, baking powder, salt, cardamom and mix well. Change the gears of the mixer to add flour as shown in the video. Add flour slowly and keep mixing until you get a moist dough. If you are not using a mixer, you can very well do so. Add all the ingredients mentioned above in a bowl and mix well. Kneed the ingredients into a dough. Cover the bowl with a thin plastic and a cloth. Let it rest at room temperature for at least 15 minutes. Afterwards, divide the dough into 4 equal parts.
Here, we will shape the cookies into 3 different shapes as shown in the video.
Heat the oven at 180 Celsius. Put a baking sheet on a baking tray. In a small bowl add one egg and a bit of milk and mix well. Use a brush to polish each cookie with this mixture and then sprinkle each cookie with black sesame seeds. Put the tray in the oven at 350 Celsius and bake for 10 minutes. Serve hot with tea of your choice.
